  • They say Ireland is the land of a thousand welcomes, and a huge part of that is actually welcoming a friend or neighbor into our homes. One of the most wonderful aromas that you will ever experience and that is sure to get you inhaling the air deeply into your lungs is the scent of fresh breads being baked. Here is one of our most requested Irish Recipes:Irish Fruit Soda BreadIngredients:1. 450g / 1lb / 3.5 cups of Plain Flour.2. 1 level tablespoon baking powder.3. 4oz of sultanas.4. 1 large egg lightly beaten.5. 1 tablespoon Sugar.6. 25g / 1oz Margarine or Butter.7. ½ pint butter milk/or sour milk.8. Good pinch of Salt.Method:1. Preheat oven to 200°C / 400° / Gas mark 6. 2. Lightly grease a flat tray.3. Sieve the flour, bread soda and sugar into a large bowl.4. Add in the Sultanas.5. Rub in the Margarine or Butter into the flour mixture and with your thumbs and forefingers; "rub in" until mixture resembles a sandy breadcrumb texture.6. Make sure to keep the mixture loose, to allow air to be trapped by the dough.7. Mix the egg and buttermilk together.8. Slowly add the butter milk little by little, working with one hand to create a soft dough.9. Turn out the dough onto a lightly floured surface.10. Gently knead the dough with the ball of your hand to create a solid mix. (Do NOT over work the dough)11. Shape into a circle about 2 inches in height and about 6 inches in width.12. Gently slash an X in the center of the bread about 1/3 the width of the dough either way and about a 1/4 inch deep. This helps the bread to rise evenly 13. Place the dough onto the lightly greased tray or a greased cast iron skillet / oven dish.14. Brush the surface of the dough with milk.15. Place into the center of the oven.16. Bake for about 40 minutes to 50 minutes at 200°C/400°/Gas mark 6 until risen and golden brown (check at 40 minute mark with a dry skewer to see if the mix is cooked through)17. Allow to cool on a wire rack covered with a tea cloth for a soft crust for 30 minutes before eating.Tips:1. Always make sure that there is no moisture on the tray before baking or the bread will stick to it after washing always put in an oven for 5 min to dry.2. Ensure that the baking tin has been properly dried and oiled. 3. If you are using convection / fan assisted oven take away 5 degrees for every 100 degrees cooking temperature. 4. Store in an airtight container. 5. No moisture at all6. To help enable a softer crust, wrap bread in a clean tea towel and the internal steam during the cooling process will give the bread the required soft crust.This is light slightly sweet bread that can be used for the perfect breakfast bread or superb tea bread for an afternoon break. It makes wonderful bread to make French toast with as it is light and airy it soaks up the beaten egg thoroughly. If you wish to experiment it works really well with many spices too, such as nutmeg, cinnamon and ground star anise.
